I am going to hire my first employee but I need them to sign a contract simply stating they will not use my information I teach them and turn around and open their own business. I own a specialty store and the skills I use are not widely known and very valuable. I will be teaching all these things it took me years to learn to a complete stranger and don;t want to be taken advantage of by him or by competitors who might try to hire him from my business. Is there any online template I can download thats a pre written contract I could just fill in some blanks with?

What you want is a non-compete agreement.
Research it = you will find that in the US, it is not enforceable unless it’s an agreement between the company and executive or senior sales employees. It would not be enforceable for store clerk positions.
